1: Melt the butter in a pot and season with nutmeg. 2: Add the flour and whisk until the mixture is golden and uniform. 3: Pour in the warm milk all at once and whisk constantly until the béchamel becomes thick and smooth. 4: Turn off the heat and mix in a lot of parmesan until fully melted. 5: Boil the pasta until al dente. 6: Shave plenty of cheddar cheese while the pasta cooks. 7: Mix the cooked pasta with the béchamel. 8: Transfer to a baking dish and fold in the cheddar. 9: Cover the surface with more parmesan and bake until the top is golden and crisp.
